This recipe for corned beef in the pressure cooker will give you the juiciest and most tender corned beef brisket in just a few minutes. Serve it with cabbage!
Ingredients
3 lbs of corned beef Brisket
One bell pepper, roughly chopped
1-2 chili peppers with a spicy kick, depending on your preference for heat
One large, sweet onion that has been peeled and roughly chopped
Six cloves of garlic peeled
2-3 tablespoons of your preferred Cajun seasoning mix
4 cups of chicken or beef broth
Instructions
Rinse the corned meat to remove any gel that may have accumulated in the container. If you have an ingredient packet for seasoning that you like, you can apply it; however, I prefer using the best Cajun or Creole blend instead.
Place the corned beef on a rack inside the pressure cooker. Then add the peppers, onions, garlic, and seasoning. Pour the broth on top.
High-pressure cook until 90 mins. The pressure will naturally release for 10 minutes. Take care to remove the lid.
Slice and serve
