How to make vegan caramelized onion dip
The caramelized onion is essential to the caramelized onions. The onions are cooked in olive oil, garlic, and salt until they turn golden brown. This is a process you can do without much effort so that you have time to complete the other steps.

- Use the following method to caramelize onions if you don’t have oil.
- Three small yellow onions thinly sliced (three small onions will yield about 8 cups or 700g of sliced onions)
- Two large cloves of garlic, minced
- 1 – 1 1/2 tsp sea salt (DIVIDED)
- 2 Tbsp apple cider vinegar
- Use 1 tbsp of tamari (or soy sauce) (if gluten-free, use only).
- Use chickpea or white miso as desired.
- 1 tsp of maple syrup
- 1 (12 oz.) package of soft silken tofu (we like the Mori-Nu brand)
- 1 tsp of lemon juice
- Heat oil in a large pan over medium heat. Add the onions and garlic and half a teaspoon of salt (adjust if you want to change default servings) and cook for 25-30 mins, stirring every five minutes. As needed, reduce the heat to low to avoid burning.
- Whisk together the miso, maple syrup, tamari, or soy sauce in a small bowl. Stir well and add this mixture to the onions. Scrape any brown bits from the bottom of the pan. Continue to cook for five more minutes until the onions are browned and flavorful. Let the dish cool down a little.
- In a large bowl, combine the tofu silken, the lemon juice (optional – see below), and the remaining 1/2 teaspoon of salt. (Adjust the amount if you want to change the default serving size). Fold the onions in the tofu mix until well combined. Add more salt or tamari if you want it saltier, or apple cider vinegar if you prefer brightness.
- Serve warm alongside pita bread, tortilla chips, crackers, and slices of vegetables. Garnish with fresh parsley to add a splash of color.
- Keep leftover dip in an airtight container in the fridge for up to 2 days. It is not freezer-friendly.
