Strawberry Granola

I make homemade granola to eat homemade granola. My favorites are chocolate chip cookies, lemon blueberry, almonds, peanut butter, and chocolate.

This Strawberry Granola is also a favorite of mine, especially in the spring and summer. The strawberry flavor tastes so good!

This granola recipe is made from pantry staples and is sweet and crunchy. After the granola is out of the oven, I add freeze-dried strawberries. The granola is also served with fresh strawberries and yogurt to enhance the flavor of the strawberry.

Ingredients

Old-fashioned Oats – Make sure to use rolled oats and not quick oats.

Coconut – You can use sweetened or unsweetened; both will work!

Nuts – I like almonds and pecans, but walnuts are also good!

Pepitas – for an extra boost of protein and magnesium. I also love the crunch.

Flaxseed Meal – A great source of omega-3 fatty acids and fiber.

Cinnamon – I love cinnamon in granola!

Sea salt – always salt!

Coconut Oil- melted and then slightly cooled. You can also use butter if you do not want to use coconut.

Pure Maple Syrup – To naturally sweeten granola.

Vanilla extract- use pure vanilla extract.

For the best strawberry taste, use freeze-dried strawberries. Stir in the strawberries after removing the granola from the oven to prevent them from burning.

Chocolate Chips- you can add chocolate chips if you want! If you want a sweeter granola, I’ll add the chocolate chips. The white chocolate chips in the granola make it taste like strawberries with cream! Dark chocolate and strawberries go together well.

How to Make Strawberry Granola

Preheat oven to 325 degrees F. Line large-rimmed baking sheets with parchment paper. Set aside.

Combine the flaxseeds, cinnamon, almonds, and pepitas in a large bowl.

Add the maple syrup and vanilla extract. Stir the mixture until well combined.

Spread the mixture evenly on the baking sheet. Use the bottom of the measuring cup or a spatula to flatten the granola into an even layer.

Bake for 25-30 minutes or until the granola is golden. Do not stir, but rotate the pan halfway through the baking period.

The granola will cool down completely on the pan if you do not stir it.

Once the granola has cooled completely, break it into clusters. Stir in the freeze-dried strawberry.

You can add white or dark chocolate chips to make it sweeter. These two flavors go well with strawberries.

Serve & Store Tips

Serving Ideas- You can do the granola as a snack with milk or yogurt, on ice cream, or by the handful. You can also sprinkle it on waffles or French toast.

How To Store- Keep the granola airtight in a jar or container in your pantry for up to 1 month. You can freeze the granola for up to three months in a container or freezer bag.

1/4 cup chopped almonds

Chop pecans to 1/2 cup.

Pepitas – 1/3 cup

Flaxseed meal two tablespoons

One teaspoon cinnamon

One teaspoon of sea Salt

Use butter or coconut oil to melt 1/2 cup of coconut oil.

1/4 cup pure maple syrup

One tablespoon pure vanilla extract

1 cup freeze-dried strawberries

White chocolate chips are optional.
